EGGPLANT PAKORAS

Eggplant strengthens the women sexual organs. It also regulates her menstrual flow.

Serves 4-6

  • 1 eggplant
  • 2 cups garbanzo flour
  • 1 Tbsp caraway seeds
  • 1 tsp oregano seeds
  • 1tsp cardamom seeds
  • ½ tsp cinnamon
  • 2 tsp turmeric
  • 2tsp salt
  • 1 tsp black pepper
  • ½ tsp ground cloves
  • ½ cup milk
  • ¾ cup onion juice or puree
  • 1/3 cup water
  • ¼ cup honey

Start slicing the eggplant around 1 cm= 3/8 inch thick and place aside. In a bowl mix the garbanzo flour with the seeds and spices. Then add the milk and onion juice and stir until it becomes a smooth paste.

Dip the eggplant pieces into the batter and fry with ghee (clarified butter) or oil until they are golden brown.

Place them over a towel paper to remove the excess of oil. You can serve them with chutney or catsup.
